Tonita’s Tropical Fresh Salad

This is one of my favorite seasonal salads like in late spring and summer. I have been known to vary the fruits like adding strawberries for color. The sweet and savory taste from the tomatoes in Tonita’s Sweet Vine Cuban Sauce frame the avocado like a masterpiece. It is always a great way to use up any leftover sauce and homerun at parties and summer meals.

Ingredients

  • 1 pineapple, chopped small

  • 2-3 mangos, chopped medium size

  • 1-2 avocado, chopped medium size

  • ½ red onion, chopped medium size

  • 6-10 cilantro sprigs, chopped small size

  • ½ cup chilled Tonita’s Sweet Vine Cuban Sauce, mild or spicy

  • ¼ cup key lime juice

  • sea salt to taste

  • cayenne pepper to taste

  • 1 bunch arugula greens and spinach mixture

  • drizzle olive oil

Directions

  • Add all ingredients in a medium bowl.
  • Stir in sauce and lime juice as the dressings. Season to taste with sea salt and cayenne pepper.
  • Place greens in a salad bowl and add all other ingredients on top of the bed of greens. Drizzle with olive oil and serve.
