Tonita’s Tropical Fresh Salad
This is one of my favorite seasonal salads like in late spring and summer. I have been known to vary the fruits like adding strawberries for color. The sweet and savory taste from the tomatoes in Tonita’s Sweet Vine Cuban Sauce frame the avocado like a masterpiece. It is always a great way to use up any leftover sauce and homerun at parties and summer meals.
1 pineapple, chopped small
2-3 mangos, chopped medium size
1-2 avocado, chopped medium size
½ red onion, chopped medium size
6-10 cilantro sprigs, chopped small size
½ cup chilled Tonita’s Sweet Vine Cuban Sauce, mild or spicy
¼ cup key lime juice
sea salt to taste
cayenne pepper to taste
1 bunch arugula greens and spinach mixture
drizzle olive oil
- Add all ingredients in a medium bowl.
- Stir in sauce and lime juice as the dressings. Season to taste with sea salt and cayenne pepper.
- Place greens in a salad bowl and add all other ingredients on top of the bed of greens. Drizzle with olive oil and serve.
