Vegetarian Black Beans
From this simple recipe come a lot of dishes that are used in my house. It is the base for Cuban Black Bean Soup and the favorite “Moors and Christians” dish.

This recipe was created using flour tortillas because of the smooth taste of how the enchilada melts in your mouth after each bite. I always enjoyed eating the neighbor’s enchiladas on special occasions ,so I decided to create my own style of using Tonita’s Sweet Vine Cuban Sauce.
Sofrito Shrimp and Quinoa
This simple meal is full of nutrition in one dish. You are getting your vegetables and it’s quick to make because the sauce is already prepared. When my Auntie Retta, nickname for Loretta, would make this dish, she would have to make the sofrito, the spicy Cuban sauce, but she usually made extra and it kept for 2 weeks in the refrigerator. You can also freeze it until the next Cuban dish.
